Cafe Rio Mexican Grill is a fast-casual chain founded in 1997 in St. George, Utah by classically trained chef Steve Stanley and his wife Patricia, built on made-from-scratch Mexican-inspired cuisine with no freezers or microwaves. The menu โ featuring customizable burritos, tacos, tostadas, and salads with fire-grilled meats and house-made salsas โ centers on the beloved sweet pork barbacoa burrito, made with slow-cooked pork, hand-pressed tortillas, and roasted tomatillo sauce. In 2011, Cafe Rio was voted the number one quick-service restaurant in the nation, outranking Chipotle, In-N-Out Burger, and Chick-fil-A, and has grown to approximately 160 locations across 11 western states.
