Cart-Driver has been a cornerstone of Denver's RiNo neighborhood since 2014, operating out of a 640-square-foot shipping container where wood-fired Neapolitan pizzas cook in 90 seconds alongside freshly shucked oysters and prosecco on tap. Founded by Andrew Birkholz, the restaurant honors Italian tradition with locally sourced American ingredients and a 200-year-old dough starter from a volcanic island in the Gulf of Naples. Cart-Driver has earned multiple Westword Best of Denver awards for best pizza and is widely celebrated as one of the city's finest thin-crust destinations.
