Launched as a pop-up in late 2020 by chefs Jordan Rubin and Cyle Reynolds, Crispy Gai opened as a permanent Portland, Maine restaurant in 2021 at 90 Exchange Street, specializing in Thai fried chicken and Bangkok street dishes. Reynolds previously cooked at Canvas, a Michelin-starred restaurant in Bangkok, bringing authentic technique and flavors to the menu. The Portland Press Herald awarded Crispy Gai four stars, cementing its reputation as one of Maine's most exciting culinary destinations.
