Koyoté is a Japanese ramen restaurant in Salt Lake City's Marmalade neighborhood, opened in 2024 by Chef Hiro Tagai, who spent a decade as head sushi chef at Happy Sumo before returning to Japan to study at ramen school and work in Japanese ramen shops. The restaurant earned praise from City Weekly and Gastronomic SLC for its exceptional ramen, including a Tokyo-Style Shoyu, Smoked Brisket, and Tantan-men, all made with meticulously sourced ingredients. Karaage wings brined for sixty hours and twice deep-fried, alongside homemade chashu-don, round out a menu celebrated for bringing authentic Japanese flavors to the Salt Lake dining scene.
