La Lecheria is a Santa Fe craft ice cream shop founded by chef Joel Coleman, formerly the chef-owner of the gastropub Fire & Hops, who opened the creamery in 2016 in the Railyard district. The shop operates on a philosophy of "ice cream with integrity," using organic, locally sourced ingredients from small New Mexico farms and making its ice cream without stabilizers, preservatives, or artificial ingredients. Inventive seasonal flavors such as red chile honey, butterscotch miso, and sweet corn have made it a beloved local destination and earned it recognition as one of the ten best ice cream parlors in New Mexico.
