Langbaan opened in 2014 as a hidden tasting-menu restaurant accessed through a bookshelf door inside its sister restaurant PaaDee, founded by chef Earl Ninsom after apprenticing at chef David Thompson's Michelin-starred Bangkok restaurant Nahm. The 24-seat venue offers a seasonally rotating five-course Thai tasting menu rooted in regional culinary history and made with Pacific Northwest ingredients, with the restaurant's name meaning 'back of house' in Thai. In 2024, Langbaan won the James Beard Award for Outstanding Restaurant — the first Thai restaurant and first Portland restaurant to win that category.
