Le Pigeon opened in June 2006 in Portland's Buckman neighborhood when chef Gabriel Rucker, then 25, partnered with Paul Brady to revamp a struggling bistro on East Burnside, naming it after a pigeon tattoo on his arm. The offal-forward French bistro earned Rucker Food & Wine Best New Chefs honors in 2007, the James Beard Rising Star Chef Award in 2011, and the James Beard Best Northwest Chef Award in 2013, with Bon Appétit calling it 'the restaurant that put Portland on the national culinary map.' Rucker also published a cookbook, Le Pigeon: Cooking at the Dirty Bird, in 2013.
