Milpa is a contemporary Mexican café in Las Vegas helmed by chef DJ Flores, who launched the restaurant in 2020 after losing his job during the COVID-19 pandemic and was named a 2024 James Beard Award semifinalist for Best Chef: Southwest. The restaurant is distinguished by its house-ground masa made using a 600-year-old Mesoamerican technique, producing handmade tortillas in three colors — red, yellow, and blue — that anchor a menu celebrating the regional diversity of Mexican cuisine.
