Mr. Tuna is a sustainable sushi bar at 83 Middle St in Portland, Maine, founded by chef Jordan Rubin, who started the concept as a sushi cart in 2017 before opening the full brick-and-mortar restaurant in 2024. Rubin was named a Food & Wine Best New Chef 2025 and a James Beard Award semifinalist for Best Chef Northeast; the restaurant's Tuna de Tigre — a coconut-lime ceviche-style bluefin dish — was named one of the 26 best dishes in the U.S. in 2024 by the New York Times.
