Saint Lawrence Gridiron began in 2011 as a pop-up operation serving Southern low-country fare at Boise underground markets, evolved into a food truck in 2012, and opened its downtown brick-and-mortar restaurant in 2014. The restaurant was featured on Diners, Drive-Ins and Dives in April 2023, and is known for its slow-smoked Southern BBQ, craft cocktails, and scratch-made sides in a rustic downtown space with views of the Idaho State Capitol.
