Smōk

Smōk is a Denver barbecue restaurant opened in 2018 by chef and owner Bill Espiricueta, an Austin native who previously worked at Nobu in Dallas and Bluestem in Kansas City before bringing his Texas and Kansas City barbecue influences to Colorado. Located inside The Source Hotel in the RiNo neighborhood at 3330 Brighton Boulevard, the restaurant has earned consecutive Michelin Guide Recommended designations in 2024 and 2025. Espiricueta's approach pairs the craft of fine dining with the casual traditions of American BBQ.
