Smoke N Ash BBQ in Arlington, Texas, was founded by Patrick Hicks, who grew up in Waco surrounded by Texas barbecue traditions, and his wife Fasicka Hicks, who immigrated from Ethiopia in 1996. Starting as a food truck in 2012 and opening its brick-and-mortar in 2018, the restaurant is the only Tex-Ethiopian smokehouse in the world, pairing slow-smoked brisket and ribs with Ethiopian spices like berbere and awaze. It was named to the New York Times Top 50 Restaurants in 2022, earned a Michelin Guide Recommended designation in 2024, and the owners were named 2025 James Beard Award semifinalists for Best Chef: Texas.
