County Barbeque opened in July 2013 on Taylor Street in Chicago's Little Italy neighborhood, founded by restaurateurs David Morton and Michael Kornick with a chef-driven menu crafted by Erick Williams. The restaurant earned four consecutive Michelin Bib Gourmand designations and was praised for its Chicago rib tips, Kansas City burnt ends, and St. Louis spare ribs alongside a standout Bacon Bar. County Barbeque rebuilt and reopened after a 2016 fire before eventually closing permanently during the 2020 pandemic.
