Smoque BBQ was founded in December 2006 by former IT professional Barry Sorkin and four partners in Chicago's Old Irving Park neighborhood at 3800 N. Pulaski Rd., drawing on BBQ traditions from Texas, Memphis, Kansas City, and the Carolinas. The restaurant earned a Michelin Bib Gourmand designation and was included in The New York Times' 2019 list of world-class American brisket destinations.
