CVI.CHE 105 is the flagship restaurant of Peruvian chef Juan Chipoco, who arrived in the U.S. at 19 and worked his way from dishwasher to owner of a multi-location empire, opening the original Downtown Miami location in 2007 after converting a struggling Cuban restaurant into a vibrant Peruvian concept. Named New Times Best Ceviche in 2024 and award-winning for twelve consecutive years, the restaurant draws thousands of diners daily with an extensive menu of creative, fresh ceviches rooted in Chipoco's Lima childhood.
