Ganko Ittetsu Ramen is a Brookline, Massachusetts restaurant credited as the first to bring authentic Sapporo-style ramen to New England, inspired by the shared cold climates of the region and northern Japan. Unlike other ramen styles, their bowls are wok-prepared — caramelizing the base with vegetables before blending it with broth — a technique that produces distinctive depth and charred aroma. Boston Magazine named it Best Ramen in Boston, and the shop sources rare, high-water-content noodles from Nishiyama Noodles, one of Sapporo's oldest noodle manufacturers.
