Joe's Dining was founded in 2002 by Roland and Sheila Richter in Santa Fe, New Mexico, with a philosophy rooted in European culinary technique and locally sourced ingredients — no restaurant in Santa Fe has historically purchased more produce from the local Farmers Market. The kitchen makes everything from scratch, including daily fresh mozzarella, smoked meats, and house-baked pastries, and received Santa Fe's first Farm to Table award in 2008.
