Sammataro is an Austin pizzeria founded by Issac Flores and partners, born as a pandemic-era backyard project in 2020 when Flores hand-built a wood-fired oven in his Hyde Park yard. Named after co-owner Kelsey Hutchins's great-grandfather Gioacchino Sammataro, the New York-inspired operation debuted as a donation-based pop-up before establishing a permanent East Austin location, earning recognition for its 48-hour fermented dough and responsibly sourced toppings.
