Takashi opened in May 2004 at 18 W Market St in Salt Lake City, founded by chef-owner Takashi Gibo, who combines traditional French culinary training with Japanese sushi techniques. Before opening his own restaurant, Gibo worked as a sushi chef at Shogun on Main Street in Salt Lake City. The restaurant is widely regarded as one of the best Japanese restaurants in Utah, renowned for its inventive specialty rolls and high-quality sushi.
