Uchi opened in 2003 in a refurbished South Austin home, founded by James Beard Award-winning chef Tyson Cole, who began his culinary career as a dishwasher at a Japanese restaurant before apprenticing for six and a half years under master sushi chef Takehiko Fuse. Cole received the James Beard Foundation Award for Best Chef: Southwest in 2011, and Uchi has since expanded to five cities.
