
Bruges Belgian Bistro
Bruges Belgian Bistro was founded in 2004 by Pierre Vandamme, a Belgian-born pilot who began selling family-recipe Liège waffles from a cart at the Salt Lake City Farmers Market before growing into a multi-location bistro. The restaurant gained national fame when its Machine Gun sandwich — a baguette stuffed with merguez sausage, fries, and Andalouse sauce — was featured on Man vs. Food. Today Bruges operates three Salt Lake City locations and is celebrated for its pearl sugar-studded Liège waffles, Belgian-style frites, and dipping sauces.
